Gellan Gum is a water soluble compound which is most commonly utilized as additive in food, cosmetics, & pharmaceutical products. It finds application as stabilizer, thickener, gelling agent, & emulsifier. This is an anionic polysaccharide which is naturally produced by sphingomonas elodea. It is a dietary fiber which is also used for improving texture of various food preparations. This gum shows high effectiveness at low levels and is available in two different types having high & low acyl content. Gellan Gum is known to have ability to form non-elastic brittle gels which is totally dependent on concentration of acyl.
